Bourekas by Ranger Shahaf


Leftovers used: potatoes and spinach
My dad and I use any leftovers from the fridge, to turn them into a new meal. Here we turn these leftovers of potatoes and spinach into delicious stuffed pastry called “bourekas”. We start by making dough from my dad’s secret recipe: It is secret because it’s in Hebrew. Luckily, I’ve been able to decode it: 300 gram flour, ¾ spoon dry yeast, ¼ cup canola oil, 160 ml warm water, ¾ spoon sugar, 1 teaspoon salt. Mixing it all together, flattening and cutting into small pieces. Next, we mashed the potatoes and spinach. The fun part is that we can use here any leftovers: mixed cheese, burgers, almost anything goes. We place a teaspoon of stuffing on each piece of dough and fold it. Then we brush it with an egg and sprinkle some sesame on top. We bake it at 400F for like 15-20 minutes, until they are golden and delicious.

Leftovers used: quinoa, beans, onions, seeds and nuts, and lettuce.
I fried onions in a pan and added the Quinoa and beans. I let it cook for a few minutes, then I topped it with seeds, nuts and cilantro.

Leftovers used: red pepper, steak, onions
We had ingredients left in the fridge that we wanted to use and have pasta for dinner. I fried the leftovers to reheat and added extra flavours.

Leftovers used: shrimp, bacon, fries and a Parmesan cheese sauce.
I really like poutines a lot. Shrimp and bacon are some of my favorite foods to eat. I thought I would try and put them on a poutine with a nice Parmesan cheese sauce. These leftovers turned into something “Special”. It turned out well and was very delicious.

Leftovers used: quinoa and some veggies
I put the quinoa in a big bowl, I carefully cut the veggies in tiny pieces and added them to the bowl, I added 2 eggs, a cup of flour, half a cup of oatmeal, a little bit of chicken broth, spices like turmeric, pepper, salt. garlic cut in tiny pieces. then I mixed it all up and then I made patties and then my mommy helped me with the pan and the pan had grapeseed oil. and then we cooked them two at a time and then we served them on a plate with avocado on the side and we melted jalapeno Havarti cheese on top of the patties.
